Kitesurfing depends heavily on the wind, so if there's insufficient wind, the course may be postponed or rescheduled for safety reasons and to ensure the best learning conditions.
Progress can vary greatly depending on individual aptitude and weather conditions. However, by the end of the course, you can expect to have a good understanding of safety procedures, kite control, and hopefully be up and riding on a board.
