Is Karak only the castle?

The castle is why buses stop. The outdoor reason is the wadis. If you only have an hour, you'll see stone and move on. If you have a day, walk a canyon.

How does Karak sit between Madaba and Petra?

It's the highland middle. Useful overnight if you're not rushing the Desert Highway. Next serious hike south is often Dana.

Are the canyons technical?

Some are walks with water. Some need more scrambling. The course page, not the castle ticket, tells you which.

When should I walk here?

Spring and autumn. Summer is an early start or a different plan. Water in the wadis is seasonal.

Things to do in Karak

Karak is Crusader-castle highlands on the King's Highway, with canyon walking (Wadi ibn Hammad and neighbours) and a staging point toward Dana and Petra. It's a working town with a big view, not a resort. You'll stop because the road and the wadis make sense, not because of a dive shop.
