Windsurfing is a clever blend of sailing and surfing. You stand on a board, haul up a sail by hand, and steer by tilting it to catch the wind. The early going involves a fair bit of hauling and falling in, but once you learn to read the wind and let the sail do the work, it becomes wonderfully intuitive and quick.
Lessons make all the difference. Beginners start on big, stable boards in light winds, usually on flat water, learning to balance and steer before the speed arrives. From there it scales all the way to waves and high winds.
